The processing of anchovies is representative of the history of Iasa, founded in 1969 for the production of salted anchovies and in oil. The anchovies, caught in the spring-summer period by the so-called "lampare", are immediately processed according to the ancient tradition of the fishermen of Cetara that requires a slow and very careful ripening. The fillets are preserved in a very delicate olive oil: an added value that gives intense aromas and flavors to a product that is called "Prosciutto di Mare" for the delicacy that distinguishes it.
