This Pecorino is made using only pasteurised sheep milk which is then matured for over 4 months during which the crust is rubbed with oil. The paste is hard and grainy and the taste is persistent but sweet and palatable, with variegated and well balanced flavours.
Skilled artisan techniques and patient aging for an unmistakable flavor: sweetness and character are "Il Vessillo" of the noble cheese art of Rocca Toscana Cheeses.
