The Capelli d'Angelo, with its evocative name and light texture, have their origin disputed between the territories of Genoa, Neapolitan and Ciociaria. They are one of the thinnest formats in long nest pasta. Even the name of the Angel Hair recalls the characteristic subtlety of this format recommended in the diet of children from 9 months and up, so as to accustom children to the foods of adults. The Angel Hair is a format suitable for recipes in broth, for the preparation of which is usually broken. The Capelli d'Angelo can also be enjoyed as dry pasta, seasoned with white sauces, eggs, raw butter and cheese, melted butter with sage and parmesan cheese or smoked ricotta.
