Passata is an uncooked tomato purée that has been strained of seeds and skins. It originated in Italy but is used throughout Europe. Some passatas are chunkier and some are smoother, depending on the brand. Some people claim that passata can also be cooked, but most agree that it is uncooked. You will also see it spelled passato and passata di pomodoro, and it can also simply be called “strained tomatoes.”
The tomato sauce is made in accordance with the most ancient tradition. The tomatoes are pasteurized and passed in a very fine sieve to remove all seeds and all traces of peel. They are then packaged in bottles and/or jars that undergo further sterilization. In this way the purée is dense and velvety and, thanks to the low temperature processing, the bright red colour, the characteristic aroma and taste are kept unchanged.
