Rocca mullet roe bottarga di muggine, circa 130gr.
A bottarga of great personality and character, with a clean aroma of seasoned sea. An intense and sweet taste, with a saline note in evidence, but round and balanced with a slightly bitter and spicy aftertaste.
Often referred to as the caviar of the Mediterranean, bottarga is the grated roe pouch of grey mullet which is massaged by hand to remove air pockets. It is then dried and salted using Italian sea salt to bring out the almondy, slightly bitter flavour.

Eggs of Atlantic mullet and/or cephalon (Mugil capurri and/or Mugil cephalus fish), Salt.
