This variety is also called "del Piennolo", because the traditional preservation technique wants to form "Piennoli", that is pendulums: whole clusters, collected between July and August, arranged on a hemp thread tied in a circle, to compose a single large cluster, kept suspended in dry and ventilated places. This system promotes a slow maturation and allows you to have "fresh red gold" until the spring following the year of cultivation.
The Pomodorino del Piennolo del Vesuvio is appreciated on the market both in its fresh state, in the typical preserved form "al Piennolo", or also as a glass preserve, according to an ancient family recipe of the area, called "Pacchetella".
