The dough of this salami is mainly made of lean meat, minced in medium-large grain, to which is added a tanning of salt, whole grain pepper and a few other aromas.
Everything is stuffed in natural casing, smooth and thick, which allows you to maintain the softness of the meat even during the aging phase. It is tied by hand and then placed in the cellar to mature for at least 60 days. The aroma is intense, characteristic, while the taste is very sweet and delicate.
It is a product without gluten, lactose and milk protein.
