Liquid and slightly viscous honey, with amber colour, very intense and dark, with various intensity gradations and slight shades ranging from red to brown. The forest honey has an intense, vegetal and fruity aroma that reminds of cooked fruit, the scent of dried apricots, caramel and fig jam. The taste is reminiscent of carob, rhubarb and licorice stick. It is slightly sweet and has a silky and velvety texture, with good persistence. It is also called "honey of honeydew" and is the only honey that does not come from the nectar of flowers, but from honeydew, that is to say the sugar secretion emitted by insects such as the pruinosa meatball or other rumbling homotteri that suck the sap of trees absorbing its nitrogenous substances. The line MIELIZIA BIO - TOGETHER FOR BIODIVERSITY is born from the long experience that the beekeepers of Conapi have with respect to the biological breeding techniques of bees. Our beekeepers' hives are placed away from sources of pollution and the bees are raised in total respect of their biorhythms, cared for with natural systems to defend them against diseases.
Mielizia honey is not pasteurized: it is produced at a temperature never higher than 40°, the temperature of the hive, to keep intact taste, perfume and nutritional principles.
Honeydew honey has in common the very dark color, until it looks almost black. It is a honey that tends to remain liquid for a long time and has a caramelized, malted taste with a degree of sweetness less strong than nectar honeys, although lacking the bitter note.

Smell:
of medium intensity, vegetable, fruity and caramelized. Opening a jar you can smell green tomato jam and very cooked jam. Decidedly devoid of the flower aromas that characterize most other honeys.
Taste:
Velvety texture, dense and tough, which is not found in any other honey because it has a slightly less sweet taste that leaves on the palate a less powerful aftertaste. Sometimes slightly salty, it has a taste of medium intensity, not very sweet, of malt, cooked vegetables, prunes, cane sugar.
Uses:
is a special honey, which can be used to sweeten and flavor milk and dairy products even for those who do not usually prefer honey. For its aroma, the particular consistency and resistance to cooking is also suitable to replace caramel in many different preparations that provide it. Excellent with ricotta mousse, mascarponi and fresh dairy products, also served slightly intepidita. Particularly suitable for bitter teas and black tea.
