Bergamot jam is special because special is its main ingredient, bergamot. It is a citrus that in appearance resembles a little lemon and a little cedar, often small in size, with a very acidic taste if consumed raw (more acid than lemon) but intense, fresh and pleasant if treated. Bergamot is a particular citrus because, in its purest variant, it grows only in a small area of Italy, more specifically in the Ionian side of the province of Reggio Calabria (in the area between the municipalities of Villa San Giovanni and Gioiosa lonico).
