The tomatoes, harvested in July, August and September are processed in order to preserve flavors, aromas and nutritional properties. After selection and washing, the tomatoes are removed from the skin by steam; only then the tomatoes are crushed, passed and concentrated.
The organic tomato puree Alce Nero is prepared without additives or added salt.
